Ingredients:
3 eggs, extra large
a pinch of salt
150 g caster sugar
115 g all purpose flour, mixed and sifted with
1 tsp baking powder
0.5 tsp cream of tartar
60 g unsalted butter, room temperature
2 Tbsp boiling hot water
strawberry jam
whipped cream
Directions:
Preheat oven to 180 deg C. Grease and flour dust two pieces of 20 cm tins.
Beat eggs until frothy at medium speed and add sugar in batches, beating all time until pale and thick (takes about 8 minutes).
In a small bowl, add boiling hot water to the butter to melt the butter.
Add sifted flour to the egg mixture and fold gently until combine.
Add melted butter to the mixture. Fold until well combined.
Bake for 15-18 minutes or until the sides start to pull off from the wall.
