"Damper is a traditional Australian outback soda bread prepared by swagmen, drovers and other travelers. It consists of a wheat flour based bread, traditionally baked in the coals of a campfire. Damper is an iconic Australian dish."
This is the adaptation from Syrie Wongkeaw's recipe on about.com. In my opinion, the original recipe has too much liquid for the dough for kneading.
Ingredients:
3.5 cups all purpose flour
0.25 cup packed brown sugar
0.25 cup full cream milk powder
5 tsp baking powder
0.5 tsp salt
1 tsp white sugar
1.5 tsp cinnamon powder
80g chilled unsalted butter
2 pink lady apples, peeled and grated
1 egg
3/4 cup water
Directions:
Preheat oven to 180 deg C and line a baking tray with baking paper.
Prepare the dry ingredients in a bowl. Also, prepare the wet ingredients before peeling and grating the apples.
Peel and core the apples. Grate the apples with a food processor using the grater attachment. Put it aside in a bowl.
Put flour in the food processor bowl. Blitz them to mix. Add grated apples, egg and water. Blend to combine. Transfer the dough to the lightly flour dusted bench. Fold and mix with a scraper until combined. Do not overmix.
Transfer the dough to the lined baking tray and shape the dough to a round shape. Bake at 180 deg C for 40 minutes or until it sounds hollow when it is tapped.
Cook's note:
- The dough is very soft, use a scraper to fold the dough.
- I used a food processor to grate and mix the ingredients as I find it easier and less messy.

ReplyDeletekali dulu buat nembel kali hehehehe bisa naik koq, kan pake baking powder. soalnya dibikinnya di outback sih, kalo pake yeast pan refot gitu :) kalo yg ini sih buat aku enaknya buat b'fast. kalo yg polosan, bisa buat dinner jg.
