Chocolate Chip Cookies

Description:
I would say that this chocolate chip cookie is slightly less guilty. I used wholemeal flour and oat meal that give more fibre than the usual chocolate chip cookies. This recipe is a variant from the other chocolate chip cookie recipe that I posted earlier.

It's best companion for drink as the cookies have crunchy dry texture.



Ingredients:
115 g unsalted butter, Home Brand
90 g caster sugar
90 g brown sugar

1 egg
1/2 tsp vanilla extract, Queen's

90 g oat meal (I used quick oats that were mealed with a blender)
135 g wholemeal flour
1 Tbsp cocoa powder, Home Brand
1/2 tsp baking powder
1/2 tsp baking soda
40 g milk chocolate chips, Callebaut

150 g chopped almods (with the membrane)
50 g milk chocolate chips, Callebaut



Directions:
I used a food processor.

Put butter and sugar in food processor. Blitz until butter is light.

Add egg and vanilla. Blitz till well combined.

Add flour mixture. Blitz till combined.

Add nuts and chocolate chips. Mix by hand till combined. Put the dough in the fridge for 15 minutes.

Meanwhile... preheat the oven to 160 deg C.

Take a tablespoon of the dough and form a ball shape. Put on the lined baking tray. Bake for 18-20 minutes. I keep the dough in the fridge in between the baking time.

If you want the cookies are slightly chewy in the center, bake for about 12-15 minutes.
