White Chocolate Blondies

Description:
This is the other white chocolate cake that I made before the white chocolate fudge cake. It is really nice, tender and moist with a hint of milky flavour. Another winner for white chocolate lover! This recipe is adapted from delicious Sep 2007 issue.

Ingredients:
70 g unsalted butter, Home Brand, chopped
300 g white chocolate, Milky Bar, chopped

3 eggs, extra large
80 g caster sugar
3 tsp vanilla extract

200 g self raising cake flour

60 g white chocolate chunks, Milky Bar



Directions:
Preheat oven to 175 deg C. Line the base and the 2 long sides of a 22.5 x 32 cm non stick baking tin with baking paper.

Melt butter and chocolate in a heat proof bowl over a saucepan of simmering water.

Whisk egg, caster sugar and vanilla in a bowl, unitl sugar dissolved. Stir in chocolate mixture then fold in the flour. Stir in chocolate chunks and pour the mixture to the tin, spread and smooth the surface.

Bake for 18 minutes until top has a firm crust but the crumb is still moist. When it is tested with a skewer, moist crumb clings onto the skewer.

Cool in the pan and cut into desired squares.
