Description:
These cup cakes are my entry for Cupcakes Spectacular 2008 which is hosted by Mbak Arfi of HomeMadeS . I followed one of the recipes from Crave by Maureen McKeon to make the cupcakes. They are moist and have pudding like texture. They are still tender even when they are cold.
If you love hazelnut and chocolate, this cupcake is definitely worth a try! :D
Ingredients:
Cake:
3 egg yolks, extra large egg 59 g mass
60 g caster sugar
90 g dark chocolate, Cadbury chocolate bits, melted
1.5 Tbsp water
90 g hazelnut meal, Lucky
3 egg whites, extra large egg 59 g mass
0.5 Tbsp caster sugar
Milk Chocolate Cream:
180 mL thickened cream, Bulla
150 g milk chocolate, Dove by Masterfoods. chopped into small pieces
30 g reduced salt butter, You'll Love Coles
Sprinkles
Cupcake papercups
Directions:
Cake:
1. Preheat oven to 180 deg C. Line muffin tray with papercups.
2. Beat egg yolks and caster sugar at medium to high speed until pale and thickened.
3. Using clean beaters, beat egg whites until soft peak form. Add caster sugar and beat until the mixture is glossy.
4. Add tepid chocolate with water and mix well. Then, add to the egg yolk mixture. Fold in hazelnut. Gently fold meringue into two batches, until combined.
5. Bake cup cakes for 16-18 minutes, until just done.
Milk Chocolate Cream:
1. Bring cream to boil in a small saucepan. Remove from heat.
2. Add chocolate, allow to stand for 1 minute, stir until smooth.
3. Allow to cool slightly, stir in butter. Cover with clingwrap on the surface and chill for 2 hours.

ReplyDeletetergantung mau pakainya berapa banya ki... di toko yg di phillip arcade ada jual lindt kiloan. yg satu lagi yg aku tahu di susy q, jual yg merk cadbury kalo gak salah. kalo yg merk carry cacao atau callebaut biasanya utk food service. di tempat suamimu kerja part time ada jual yg kiloan gak ya?

ReplyDeleteDuh seneng dapet resep ini, pasti dipraktekkan. Soalnya anakku yg paling gede nggak bisa kena wheat four sama sekali, mesti glutenfree-diet. Thanks ya! Keliatan menarik banget gitu!
ReplyDeletewah susah jg ya, mana di mana2 banyakan pake cereal products... wheat allergy atau gluten intolerance ya (kalo boleh tahu...)? cuma mesti ati2 dgn ingredient lainnya yg aku pakai, kali2 merk itu dibuatnya di pabrik yg ada pakai wheat products.
ReplyDeleteMemang susah ngurus makanan anakku yg satu itu. Dia kena penyakit yg namanya coeliakie, itu gluten intolerance. Tapi sekarang udah terbiasa, kemana2 udah otomatis alert ama segala macam jenis makanan. Kalo belanja mesti baca semua bahan2 kandungannya sampe detil. Mangkanya seneng juga dapet tambahan resep yg nggak usah pake wheat products. Ingredients lainnya pasti aku sesuaikan ama yg bener2 gluten-free.
ReplyDeletehmm emang mesti ati2 sih ya... tapi untungnya udah ketahuan sejak dini. aku ada kenal org yg kena celiac disease dan ketahuannya setelah tua. katanya lining di ususnya kena erosi gitu.

Terbukti waktu gw musti bikin poster buat promo F&B hotel, beli foto dari istockphoto - satu lagi gw lupa, nyari food shot itu susah banget......

ReplyDeletemenurutku sih... kan gak ada glutennya. tekstur kuenya sih terlihat mirip bolu tapi begitu dimakan kerasanya spt busa pudding itu lho... duh susah njelasinnya.

ReplyDeletesaya tuh gak pernah brani makan kue yang tanpa terigu...kebayang richnya soale....
nyoklatnya sih jangan ditanya deh ehheheh mantap banget. pas aku bikin, aku cuma bikin 1/2 resep saja spt yg ditulis di atas. aku belum pernah nyoba ya pake gluten free flour sih. kapan2 aku pengen nyoba yg pake gluten free flour, pengen tahu jadinya spt apa.
