Sambal Tempe (Spicy Fried Tempe)


Description:
I haven't had tempe for about 3 years and finally I found frozen organic tempe packs at one of Indonesian groceries. The tempe looks 'normal' and costs $2.20. It is different from the tempe that I usually find at Coles Supermarket in Caulfield. The tempe at Coles is wet, just does not look like the tempe in Indonesia.

This tempe is firstly deep fried and then is mixed with chilli sauce and other spices. Really delicious as a companiment of hot steamed rice.

Ingredients:
1 pack of tempe, defrosted and cut into cubes
1.5 tsp salt
0.5 tsp garlic powder
300 mL water
oil

2 cloves garlic, finely chopped
3 Tbsp sambal oelek, Yeo's
0.5 tsp caster sugar
0.5 tsp salt

0.25 lime

Directions:
1. Soak tempe cubes in brine (water, salt and garlic powder) for about 30 minutes
2. Drain the water
3. Heat up some oil to deep fry the tempe cubes. Fry in batches until tempe is golden brown. Blot the oil with paper towel. Coarsely mash tempe with fork
4. Make the chilli sauce by heating up some oil on a small frying pan
5. Saute the garlic until fragrant, add sambal oelek and the other ingredients, except lime. Add the tempe and mix well. Adjust seasoning to your taste.
6. Serve sambal tempe with lime.
